Leases, Ex-girlfriends + Meatless Mondays

It was not a date.

He of course gave me the full rundown even though I didn’t exactly ask for it. Though I did say, “I’m off to do my yoga, while I’m gone I simply MUST know how your date went last night. ~_^”

He’s been working overtime a LOT lately. And as a way to show their appreciation and offer him a “break” of sorts, they gave him money to go out to dinner. She is a lot more available at the moment than I am. So he took her. But it was NOT a date. He ASSURED me that he will be taking me on a real date ASAP.

Ah, catty ex-girlfriends. Life is so much more interesting with you around.

P.S. I love her.

Breakfast:

Bowl of cereal. So boring lately, I know. I will be fixing this very very soon.

Lunch:

I finished a project in the morning. Took it to the house to take pictures of it and fulfill arrangements with my husband to get the rest of the money out of my PayPal. He’d left me his PayPal debit card (I know his PIN of course), but I never saw him all day. I got the money I needed, paid him back immediately (through PayPal of course) and met with the landlord to sign the lease at 3:00. Went back to the house to drop off the card. Still not home. Interesting. Ran a couple more errands and got back to my brother’s at about 5:00. Practically dinner time. I made myself a small PB&J sammich. At least I had something.

Dinner:

WAFFLES FOR DINNER! My brother is a genius. ^_^

 

Tomorrow is moving day! My husband is supposed to help with moving my bed and armoire, 2 out of 3 pieces of furniture I actually own. He’s borrowing his dad’s truck to help. I’m hoping I will not have to be at my brother’s tomorrow night! Fingers crossed!

Complete and utter lack of pictures

I’ve once again, in the light of packing and getting shit done as quick as I can, have taken no pictures. But I do have a couple of interesting stories, so I will update anyway.

Facebook is an interesting place. You can make someone feel like crap in a completely new and harmless way. Just updating something that seems general and random but YOU realize is directed toward YOU opens doors to hurt others in a way you never thought possible. Or at least try to…

Potential Future Husband #1 has this awesome ex girlfriend. She’s cool as fuck. I really truly like her a lot. We are Facebook friends and actually chat on a fairly regular basis. While we both realize the other is awesome, we both also realize that the other is direct competition. You see, she is not the one who broke up with HIM 2 years ago. So she is still rather infatuated with my future mate. She’s also super jealous of me, my physique, my wit and my obvious connection with her ex. Keep your enemies closer?

Today she made an update that, for a split second, made my heart fall into my stomach.

She’d claimed she was on a date with him.

And I knew, this update was for me. This was meant to hurt ME. While everyone else on her Facebook congratulated her and asked for details, I was left wondering….wait a minute…just because SHE thinks they are on a date does NOT mean they are. And of course, even if they ARE on a date, what is this, High School? I’m 31. I have no claim to this man whatsoever. He is free to date whomever he wants. I just need to make certain that I get a date eventually as well.

But I guarantee, and I would put money on this, that it is not a date.

Oh being single certainly is an adventure, isn’t it?

Breakfast:

Remember, I’ve a total lack of pictures today. I am sorry. Just a bowl of cereal today I’m afraid. Much much work to do before packing!

Lunch:

PB&J, half an avocado and a few baby carrots.

Dinner:

Homemade pizza!!! And no pictures! GAAAAH! My brother made a pizza from scratch, including letting the dough for the crust rise overnight and everything. He put sausage and fresh mozzarella on it. It was completely wonderful! Though he was convinced he’d totally messed up the crust, it tasted wonderful! We’re both hard on ourselves when we cook.

On top of all the other fun I’ve had today, I have to get my rent out of my PayPal. It only lets me take out $300 a day. I need $860 by tomorrow. Awesome. I can take out $300 today and $300 tomorrow, but still need another $260. Which means I have to ask my ex-jerk for help. Lovely.

Don’t worry, fun updates about ex-girlfriends are sure to ensue!

Exercise: 4 mile walk. My feet had to be bandaged up, and they still hurt a little, but I managed to not get any blisters or make my feet bleed. Yay!

Prison

Not certain I’ve mentioned this yet, but my husband is going to prison for 2 weeks starting next Saturday.

He’s very pompous. Very sure of himself. Confident that he will never get caught for the dumbass stunts that he pulls. Even when he does get caught he likes to brush it off as “shit happens” and is certain he won’t be severely punished for his actions. He was actually sentenced to 3 months, which I secretly wish he got as it’s what he deserves. His amazing lawyer was able to talk them down to 2 weeks plus 80 hours of community service.

So this means I take care of the cat for 2 weeks.

I must admit that I am excited about this. Jack Donaghy the cat will get to live with me in my new place for a period of time. I will not have much yet. I don’t have any furniture save for my bed and work table. I hope he is not too bored. I love him. I hope to get to take care of him more often in the future. I know my ex-idiot likes to take random trips to Vegas, I am certain I will be able to take care of him during those times as well. I don’t often take pictures of my animals, I feel no one really cares and no one really wants to see them, but in this case I will make ONE exception.

P.S. I did not eat the kitteh.

Breakfast:

Strawberry Rhubarb Muffins

FINALLY! I get to do what I do best for my family! Cooking breakfast!!!

Ingredients

  • 2 cups all-purpose flour + 1 Tb. to coat the berries
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tap. Salt
  • ¼ cup butter
  • ¼ cup vegetable oil
  • ¾ cup sugar
  • 1 egg
  • 1 cup plain yogurt
  • ½ tsp. almond extract
  • ¾ cup chopped rhubarb (one large piece)
  • 1 cup chopped strawberries
  • ¼ cup brown sugar r for the top

Instructions

  1. Preheat the oven to 450 degrees F.
  2. In the bowl of an electric mixer, cream together the butter, sugar and oil until smooth.
  3. In a separate bowl, combine the first four dry ingredients.
  4. Add the egg, yogurt and almond extract to the sugar mixture and mix well. Slowly add the dry mixture into the wet mixture.
  5. Add the chopped rhubarb and strawberries and lightly mix in.
  6. Place paper muffin liner in your muffin tins.
  7. Use a ¼ cup scoop to fill the liners. Sprinkle a little brown sugar on the top of each muffin.
  8. Bake for 12-14 minutes until golden on top.

Preparation time: 15 minute(s)

Cooking time: 12 – 14 minute(s)

*OK kids, I realize I make my muffins MASSIVELY huge. I fill those damn cups all the way and put LOTS of fruit inside! So I did a half recipe that made 6 muffins. 2 of each of us! I also made a crumble topping out of brown sugar, flour and butter. Put a ton of that on top as well. My brother and sister-in-law were NOT disappoint! There were so many “Mmmmm!’s” during breakfast I thought my little heart would esplode with happiness! I’m always able to get them nice and golden crispy on top with the sugar and butter topping and beautifully light and fluffy on the inside. These were NO exception! YESSSS! I love when I can really show people what I can do!

Lunch:

Egg Salad Sandwich

My brother made it. Not sure how. But it was magical! I also had 5 or 6 baby carrots and 5 or 6 little squares of whatever was left of the chocolate cheese. Delicious!!!

Dinner:

My brother made a gorgeous stir fry with some green pepper that I bought, some chicken, onions and mushrooms. I know he made a pineapple ginger sauce for it. All on top of some sticky rice. Sounds like something I would make, no? He is definitely my brother!

 

So this is my last weekend here! I’m going to start packing up my stuff tomorrow most likely. I meet with the landlord on Monday to sign the lease and exchange money. I’m going to miss it here so much, I love my family. It has been such a joy living with them. I’m going to do a weekly girly manicure night with my sister-in-law as I’ve had so much fun with it! I don’t want to lose that with her! I do hope to find a couch soon! I also need to make some curtains!

My brother’s MP3 player

I am very proud of my brother’s taste in music. I know I have a LOT of influence in it. He knew that my MP3 player is pretty tiny and doesn’t hold a lot of music. So he gave me one of his old ones. I’ve kept all of his music on it as I know everything on it will be gold, even if I don’t already know it. I generally use it while I am at the gym. There are certain songs that will randomly pop up that just make me so proud and happy that it overwhelms me. Often they also remind me of a certain point in my life. This, paired with the fact that I have much adrenaline raging through me due to the nature of working out, I start to cry.

Breakfast:

Another cereal day. I had to leave immediately after making breakfast to go purchase supplies. I had a LOT of work to do today.

Lunch:

Straciatella (Italian Egg Drop Soup)

Ingredients

Directions

In a large saucepan bring stock to a boil over moderate heat. In a bowl beat together the eggs, Parmesan and parsley. Reduce the heat to low and drizzle eggs into stock, gently stirring. Simmer, stirring, just until eggs are set. Season with salt and pepper.

*Did I totally screw this up? Well…not totally. But it was still wrong. It at least didn’t look like little balls of scrambled egg in liquid. These…ALMOST look like strands of egg like it should look. Hehe. Bah! It still tasted awesome! That’s what matters! ^_^

Dinner:

My brother made these gorgeous looking quesadillas with cheese, mushrooms and tomatoes and of COURSE I forgot to take pics. Dammit. Grrr….I don’t know where my head is.

 

I hope to be adding to the list of songs that make me cry soon. Being so happy that I cry is always an awesome feeling to me.

Scams

Today was an interesting day.

I thought for a minute that I had sold my motorcycle!

Ah Craigslist, what would life be without your spam and scams?

Throughout the day the emails from this guy had been getting weirder and weirder until he started saying something about ME sending HIM money through Western Union. I ended the transaction right there. Lucky for me I’m not an idiot. (Disclaimer: This is not to say that everyone who is taken in by a scammer is an idiot. But you have to be pretty stupid to fall for this particular guy’s scam.)

So I spent the entire day thinking that I was set. That I was going to be able to pay off my credit card debt. That I might actually be able to afford a couch and that mirror that I want so bad. It was just terrible of this guy to not only try and scam me out of money, but to scam me out of my peace of mind. THAT was what really hurt. I hope this guy dies and rots in hell.

Breakfast:

My brother bought cinnamon bagels and strawberry cream cheese and said I could have one! YUM! I can’t remember the last time I bought bagels! I used to live off of them every day.

Lunch:

Avocado, Tomato and Goat’s Cheese Sandwich

Exactly like it sounds. I crumbled some goat’s cheese, put some sliced avocado on top of that then some sliced tomato on top of that. I may have also put a little light mayo on the other slice of bread. Done!

Dinner:
At my dad’s we had some pork roast and green beans. My dad is an amazing cook so the food was just wonderful! He made rhubarb cake for dinner with a little scoop of vanilla ice cream. He knows how to do it up right! He even gave me a whole bunch of fresh rhubarb from his garden. YES! I’m totally using this to make my brother and sister-in-law breakfast on Saturday when they are both off work!

 

The money transaction went over painless. He actually just sent it to me via PayPal. No problem. I told him about the possible sale of my bike and that maybe I could pay him back right away. I had to break it to him later that it was a scammer. I am very grateful for my dad. He knows I won’t be able to pay him back until I move out. I know secretly he knows this. And he’s OK with it.

LUCKY I got called into work

I got called into work today. I was more than happy to go in as I really need the money right now. I walk into the back room and everything is all decorated with “Happy Retirement!” accompanied with many sweet treats. As I instinctualy grab for a small brownie I know who this is for, though it wasn’t known to anyone that it was happening today. This is for the amazing lady who first hired me 10 years ago. She’s been with the company 35 years. She and I are good friends.

Today is her last day at work.

I wouldn’t have missed working with her today, giving each other a hard time through many giggles, messing with the customers and making them and ourselves laugh out loud…for the world.

I will miss her so very much. But she will be around! We can’t get rid of her that easily. ^_^

But because I got called in early today, my schedule was a bit thrown off and I got no pictures of any of my food. I’m sorry! I will make it up to you with REAL pretty foods once I finally move out next week!

Breakfast:

Just a quick cereal! Had to be fast so I could take a shower and run out the door!

Lunch:

 

I made myself a peanut butter and jelly sandwich for lunch along with a pear to bring to work. Then at work I totally had like, 2 brownie bites, 2 pieces of cake and 2 little mini cupcake things. It’s a celebration! I’m allowed to have some treats!

Dinner:

I had that last serving of lentils! I can’t believe I had the same dinner 3 times this week! That’s just crazy for me! It also goes to show how friggin’ good these lentils were.

 

Tomorrow we go to my dad’s for dinner and so I can beg for money from him. I feel bad about it, but I know he’ll get it back eventually. No big deal! He is more than happy to help as well. I shouldn’t feel so awful, most kids bleed their parents dry asking for money long after they’ve moved out. And this really is an unforeseen circumstance. “Emergency” if you will. And he will get it back. SO much craziness…one chapter of someone’s life ends and another’s begins. I’ll be in her shoes someday.

Wish there were more hours in the day

Finished a project that I started last night, did yoga, went out to buy more supplies, started and finished another order, went to work out, and I came home with the intention of doing even MORE work, but was just so bushed. I’d never been so tired at 8:30PM before. I wish I were robotic. I wish I didn’t need sleep.

I would be incredibly sad to not need food though.

I love it even more now that it doesn’t control me.

Breakfast:

Creamy Pear Cardamom Oatmeal

I just made oatmeal with milk instead of water. Made sure to use enough milk that it was nice and creamy. Added lemon honey, cardamom and pear slices. Topped it with some sliced almonds. Really. Really tasty.

Lunch:

Smoked Sausage and Kale Soup

I’ve made this before. This time I made it with less oil (hehe), beef sausage instead of turkey and chicken stock instead of beef stock. Find the recipe here.

Dinner:

TODAY I got to have leftover lentils! YES! They totally saved some for me! Life is great! AND I didn’t even eat them all, there’s still another serving left!

 

Potential Future Husband #1 really wants to get back into shape. Which is totally awesome and adorable. He tells me every day how out of shape he is and how he’s going to fix it. He really really wants me to like him, I can tell. Lucky for him, I already do. No matter what weight he is. ~_^And I really mean that. It’s interesting to me how much I actually DO mean that.

But it totally can’t hurt.
