Money woes

I keep spending my money on things I shouldn’t be spending my money on.

I have rent due in a week. I simply do not have enough for it. So I am freaking out slightly.

I shouldn’t, because whenever I desperately need money, that seems to be the time I start selling the most stuff. And then everything is okay. But until then, I freak out entirely.

I’ll be okay. I just need to work harder. And eat better to keep my energy up!

Breakfast:

Perfectly Crispy Waffles with Mango Syrup and fresh Diced Mango

Waffles:

INGREDIENTS:

  • ½ cup AP FLOUR
  • ¼ cup Traditional WHOLE WHEAT FLOUR
  • ¼ cup CORN STARCH
  • 1 TBSP GROUND FLAX MEAL (optional but good for you)
  • ¼ tsp BAKING SODA
  • ½ tsp BAKING POWDER
  • ½ tsp SALT
  • 2 tsp CANE SUGAR  (use refined sugar if you don’t have cane sugar)
  • 1 cup BUTTERMILK (or buttermilk substitute)
  • 1/3 cup SMART BALANCE OIL (you have to use oil and this is probably the healthiest)
  • 1 EGG (lightly beaten)
  • 1 tsp VANILLA EXTRACT (You can use two if you like)

PREPARATION:

Thoroughly mix all of the dry ingredients.  Add the wet ingredients to the dry and mix thoroughly but don’t over mix.  Let it sit for 15 minutes and give it a couple of stirs.   Let it sit for 15 more minutes

Here is a punch list of techniques to guarantee success:

  • Preheat the iron
  • Do not spray the iron with non stick spray.  Plenty of oil in the recipe
  • Fill the bottom of the iron with the correct amount of batter which will differ based on the model.
  • Close the cover and leave it alone.  Some irons have a light that says it is done.  It is not done.  The waffle will steam a lot.  When the steam slows down to barely steaming the waffle is done.  You can now open it and check.  It should be medium dark golden brown.  It steam turns to smoke you waited too long.
  • Close the iron for a minute between waffles and let it recover.
  • You can heat an oven to 200 and keep your waffles in there for a bit if you are making a lot ahead of time.  Don’t stack them on top of each other and don’t cover them or they will get soft.

DO NOT SKIP ANY PART OF THIS RECIPE! If you need to make buttermilk, the substitution stated in the directions works incredibly well. I used full fat milk instead of skim and was VERY pleasantly surprised with the results! So any milk will work great! LET THE BATTER SIT for the allotted amount of time! If you can, also let your buttermilk substitution sit in the fridge for half an hour to an hour before using to allow it to thicken.

Mango Syrup:

Pureed mango + pineapple juice
Equal part sugar
Water to adjust thickness of syrup

Heat this mixture in a saucepan until sugar is dissolved and syrup is of desired consistency, adding water when necessary.

INCREDIBLE! FANTASTIC! FINALLY a crispy waffle!!! It only took like 10 attempts and different recipes to get it, BUT I GOT IT! I will be saving this and recommend it to absolutely everyone!!!

Lunch:

Pesto, Tomato and Feta Cheese Sandwich

Since I had such an eccentric breakfast, I went for a much more simple lunch! I used some of the leftover pesto from the night before, spread a thick layer onto bread, sliced up some tomato and laid that on the other slice, topped it with a drizzle of olive oil and a little crumbled feta, and PRESTO! One of the best sammiches I’ve ever made!!!

Dinner:

Alton Brown’s Baked Mac & Cheese

Ingredients

  • 1/2 pound elbow macaroni
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 tablespoon powdered mustard
  • 3 cups milk
  • 1/2 cup yellow onion, finely diced
  • 1 bay leaf
  • 1/2 teaspoon paprika
  • 1 large egg
  • 12 ounces sharp cheddar, shredded
  • 1 teaspoon kosher salt
  • Fresh black pepper

Topping:

  • 3 tablespoons butter
  • 1 cup panko bread crumbs

Directions

Preheat oven to 350 degrees F.

In a large pot of boiling, salted water cook the pasta to al dente.

While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it’s free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.

Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.

Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.

Remember to save leftovers for fried Macaroni and Cheese.

*I of course modified this slightly. I used Monterrey Jack cheese instead of Cheddar and I used cream cheese in the place of some of the milk to make it even cheesier and creamier. CRAZY!!! Luckily I could only eat half of this! I’m getting better with my portions, but I also find myself sort of wanting to automatically eat make 2 servings of meals now since I feel I will have to start getting used to it? If that makes sense. I’m so so so glad to have a man who loves my cooking!!!!!

I walked a lot today. I got a lot of work done as well, 2 projects finished and sent! Long day, but look at all the great food that came out of it! This is what my blog is supposed to be! I’m so happy!

Today went so much better with the food thing.

I don’t want G (PFH#3) to kick my ass tomorrow when he takes me out to lunch. I want to be able to tell him that I ate. I can’t lie to him. It hurts.

And I got pictures of everything.

Breakfast:

Bowl of cereal. It was nice to eat in the morning again! I’m out of cereal now though…

PB&J w/Apple. While I was out and about shopping today I also ate like, a couple of the small end pieces of my bread loaf. Yum!

Dinner:

Mango Chicken with Mushrooms and Sweet Potato

This was crazy to jump into after not eating for 5 days, but its also one of my absolute favorite dishes, so I knew I’d be motivated to actually eat it. I also desperately needed to use up mango that was just going bad. 2 out of 3 were still ok. *whew!* You can find the recipe here! As usual it looks gorgeous and tasted wonderful.

Running around all day was insane. I blew through my week’s gas budget in 2 days going dancing and then shopping around. I just wanted to be absolutely certain I was getting what I wanted. I won’t settle for less than awesome!

Eating again felt great. I already have more energy and am excited about the possibility of working out again soon. I’ve missed it.

AND I’M GOING TO HAVE COUCHES!!! WOOOO! (The table won’t arrive for another 3 weeks…booo.)

Thank you everyone for being so encouraging and helping me stop being stupid to myself. I knew I was overreacting. I just didn’t want to take it out on anyone else, especially when they didn’t deserve it. And then I realized by hurting myself I DO take it out on other people…so I stopped. I am not depressed anymore. I am ok. ^_^

 

What’s great about being poor

You don’t binge because you don’t have the money to.

Every time I finish eating and start saying to myself  “God I could go for another bowl of cereal…” I remember that I am poor and so will have to buy more cereal quicker if I eat it all now. I do not wish to do this. So I stay satisfied with my 1 bowl of cereal.

This is the best “keeping the weight off” program yet.

Anyone else out there have real life “tricks” for eschewing a binge?

Breakfast:

Banana Waffles with Mango Coconut Compote

I used this basic waffle recipe and substituted some of the liquid for a banana: http://buffaloeats.org/2010/02/08/cookin-with-walt-amazing-restaurant-quality-crispy-waffles/

INGREDIENTS:

  • ½ cup AP FLOUR

Then I made a compote out of chopped mango, equal parts water and sugar and unsweetened coconut.

*Trying to experiment with making crispy waffles and then adding a banana to the batter? Well that isn’t really going to give one the results one is looking for, is it? Ah well. It was still REALLY yummy! If nothing else. Hehe. The mango topping was absolutely superb! Gave a real nice tropical feel along with the banana.

Lunch:

I think I just devoured a quick sammich and an apple before going into work…it was probably nothing exciting so I didn’t bother with a picture.

Dinner:

Since it was Meatless Monday, and the soup had chicken in it, I went with a spinach and artichoke quiche bought from our cafe. I didn’t really have time to make anything at home with all the running around I ended up doing this morning.

 

Work was A-MAZING! I got to work with my 2 favorite guys (G and J respectively) and I was once again not stuck behind a register all night. We were pretty slow so I got to chat with my favorite guys all night. This always makes for a pleasant work environment and a very very happy Miss P. G didn’t want me walking home in the dark, so he took me home. I’d prefer to get the exercise of course, but I’d promised another co-worker that if anyone ever offered me a ride home, I would take it if it was dark outside. (He worries about me too even though I live on a very busy main street.) We had a nice chat and are planning a lunch date next week! I have lunch fairly often with this guy, we’re good friends. I’m quite happy and excited about it.

The other co-working is Potential Future Husband #2 if he’d have me. We adore each other completely. COMPLETELY. It’s always the best day in the world when I get to work with him and our bosses normally make it a point never to schedule us together because nothing will get done. ^_^ But alas, I have certain qualities that he would probably not be able to deal with in the end. I know its me. It’s not him. I could live with him. I’m great at compromising. I don’t give a fuck what you look like, what kind of illnesses you have, or what you do as long as you love me. Not everyone works the same way I do…other people have certain “dealbreakers” and, kids…when it comes to his dealbreakers…I have a BIG one.  He doesn’t even know it yet. But trust me, I have one and he would not be able to deal with it. Ah well! We’ll be happy just being super close friends.

I let the landlord know that I have a leak under my sink. He has informed me (quite quickly actually!) that there will be plumbers here tomorrow to fix everything. YAY! I love my new landlord!!!

Universe Cookies

Today the universe likes me!!!

I went on walk, which was the first awesome thing about toady. My feet didn’t bleed or blister. There wasn’t a cloud in the sky. I walked by a bench and lo and behold notice a completely unopened box of Girl Scout cookies sitting on it! Did someone eagerly awaiting the arrival of a bus, in their excitement upon said arrival, FORGET their box of Tagalongs? How does one simply forget about such an amazingly delicious snack?

Today the universe said “Sorry about yesterday…here’s some cookies!”

Holy crap, apology accepted!

Breakfast:

Strawberry, Blueberry and Mango Cobbler

Used the recipe in this post and used the above fruits. ^_^ I think I should have used a bit more butter, but otherwise it tasted fantastic as usual!

Lunch:

I know, it kinda looks a lot like yesterday’s lunch. Only THIS time its a ham sammich with tomato, jalapeno cilantro mustard and sharp cheddar on an onion bun. I found out I cannot keep breads on top of my fridge because somehow the bottom of the bag gets soggy. All of my bread is ruined. This is the only one that wasn’t wet. I also had an orange and 6 Tagalongs!

Dinner:

Mango Chicken

Taken from this post, it’s something that seems to get better and better every time I make it! I definitely outdid myself yet again as this was just SOOOOO delicious. I just love mango! I did a 1/3 recipe for my own future reference and thought the spices were just perfect for a 1-serving dish! I love meals that kick me in the mouth.

 

I had a splitting headache most of the day for some reason. This sucked. But I was able to take a quick hour-long power nap and felt MUCH much better! I was able to get a project done and then make myself an amazing dinner! Today was an incredibly good day! THANK YOU FOR THE COOKIES UNIVERSE!!!

Exercise: 2 hour walk

 

Tired

I finished a major project today. On time and everything. I worked so hard. I wanted to go on a walk afterwards but was just so very very tired. So tired. Instead I opted for a nice, long, hot, relaxing shower. Relaxing…when WAS the the last time I did that? Hell, when was the last time I took a shower? I’ve been working so hard that it’s been days…I can’t be sacrificing personal hygiene just to work more. I know I need to get out of here, but that’s simply ridiculous.

My brother calls me from Boston where he is attending PAX (geek/nerd convention, consider me jealous…) just to check up on me. He’s just an amazing person. I have no idea what I would do without him. I confess to him that I need to get out of here. He, of course, promptly (once again) opens his spare bedroom and an upstairs work room up to me and says that though they won’t be home until Monday, I am free to move in whenever I need. They are excited to have me stay. I promise that the longest I would need would be until the end of the month. I wouldn’t possibly want to burden them any longer than that and on top of that, it’s the longest the landlord will hold the apartment for me. He assures me they can’t wait to have me move in and that I can stay as long as I need!

I keep feeling that I am a burden, but then I think…”Well, if my brother was in the same situation, or ANY crappy situation where he had to move out, would I find him to be a burden on me if he needed to stay at my house?” OF COURSE not. I would be OVERLY excited to have him stay with me! And of COURSE he could stay as long as need be! Don’t be silly, head. Stop thinking its some awful thing to ask for help sometimes. You are not a burden. You just need help. It’s not weak to ask for help. Sometimes…it’s weak NOT to ask.

Breakfast:

Kale, Tomato and Cottage Cheese Frittata

Sauteed some onion and garlic in a bit of olive oil. Added the kale and allowed it to wilt and cook down for a while. Whisked together 2 eggs with about 1/4 cup cottage cheese, salt, pepper, basil, oregano and parsley. I poured that over my veggies. While I allowed that to cook for a few minutes, I sliced some tomato and added them neatly on top along with 1 heaping T of grated Romano. Threw that in the oven at 400 for 8 minutes. Perfect! SO much food, great start to my productive day!

Lunch:

Carrot, Mango and Cilantro soup

Boiled 1 sliced carrot, grated ginger, and S&P  in 1 cup chicken stock and 1 cup water for about 9-10 minutes, until the carrots were soft. I added a bunch of chopped cilantro, about 1 T of lemon juice (maybe a little less), some leftover chopped mango (about 1/4 cup) and some cayenne pepper for a little kick. Let that simmer another couple minutes. Whirled it all in my blender. Boom. The kick of the cayenne was AWESOME and unexpected to my tastebuds! LOVED it!

Dinner:

Cranberry Apple Chicken

1 Apple, sliced (I left the skin on)
1 Chicken Breast, sliced
2 slices of a Vadallia Onion, cut into smaller slices (these onions are HUGE)
Dried Cranberries
Walnuts
1/2 cup Red Wine
1/4 cup Apple Cider Vinegar
1/8 cup Berry Liqueur
2 T Brown Sugar (probably too much for most of ya, just do 1 T for normal palettes ^_^)
Pinch of dried Sage
Pinch of Cinnamon

OK sounds about right. I did not put this together the same way I normally would, I screwed it up just a little bit…but NORMALLY I would sear the chicken on both sides in a little oil, remove them from the pan, sautee the onions in some oil and butter in the same pan, let them caramelize a bit, add the apples, let THEM caramelize and soften a bit, then remove THEM from the pan. THEN add all the sauce ingredients to the same pan along with the cranberries and walnuts, let it reduce a bit, add back in the apples and onions along with the seasoning and sugar and cook until the apples are soft and the sauce is thickened. I served this on top of brown rice (I made a dry 1/3 cup, which ended up making a LOT of rice hehe! YUM!) which I carefully placed my chicken strips on top of and topped with the apple cranberry sauce!  DELISH! I LOVE cooking apples and chicken together! I devoured this in a heartbeat! And it was a LOT of food!

 

I’m incredibly excited about tomorrow. I’m going to bed super early tonight, I’m just so tired. And I want to start my day nice and early tomorrow! I can’t express enough what a wonderful change this is going to be for me. I will be in an area of town that I can walk to everything. I will be right down the street from a farmer’s market. I’m going to be able to save a TON of money. I’ll be even closer to my gym at my brother’s than I will be at my apartment! ^_^ I’m gonna do a shitton of working out! YES! OH OH and I’m going to treat myself to some clearance candy tomorrow because I didn’t get any today. CANDYYYYY!!!!!

Exercise: None. No yoga or anything. I was just worn the fuck out. I will make up for it tomorrow!

Getting thinner?

Whoops.

Somehow I’m losing inches.

Not weight…I actually, last I checked, still weigh the same. About 143 lbs. Granted, I only check once a month now to keep myself sane. But I could tell when I put my hands on my hips that I felt smaller. So I measured myself today. My waist is back down to 26.5 inches.

What the hell?

I’m guessing it’s my working out that’s doing it. I know I’m gaining muscle as I definitely look leaner. But I’m worried about looking too thin. It’s not my intention to do so. I’m also assuming though that if I look leaner and muscular, I won’t look too thin?

I’m a bit confused. My cousin that keeps me accountable says I’m ok. I eat well and am conscious enough about keeping healthy that I’m clearly taking care of myself. So I shouldn’t worry. What do all of you think? You see what I eat and how much I work out every day. Which really, I go to the gym LESS now than I did in the winter since I do more walking, only about 2-3 days a week, and walk the rest of the time. So what do you think? Since I still weigh the same am I doing ok?

Breakfast:

Mango Breakfast Pizza

  • 2 cups spelt flour (I used half whole wheat, half AP)
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup organic butter
  • 2 tbs brown sugar
  • 2 tbs white sugar
  • 1/2 cup soy milk (I used 2% milk)
  • 1/4 cup jam (I used strawberry jam)
  • 1/4 cup cream cheese
  • 1 mango, thinly sliced
  • 1/4 cup sweetened shredded coconut
  • As much peanut butter as it takes to float your boat (I made a coconut cream syrup topping)

Preheat oven to 400. Oil a full-size spring form pan (9in I believe). Mix together the (1st three) dry ingredients in a large bowl with the sugars. Pour in milk and softened butter. Mix together to form a dough. I used my hands, it was fun. Use your hands again and press dough evenly into the bottom of the spring form. Mix together jam and cream cheese and spread over crust, I reserved some because I wanted an exposed crust. Arrange your mango sliced over top and sprinkle with coconut.  Throw that baby in the oven for about 25 minutes.  When she’s done and cool, drizzle peanut butter across the top (or pipe with a piping bag if you suffer from some sort of neuroses like I do).

Coconut Cream Syrup topping:

Coconut Milk
About 1 T Cream Cheese
2 T Honey
A little water to thin it out

Melt the cream cheese in a saucepan. Add the rest of the ingredients and simmer until thickened. Add a little more of whatever you’d like to make it to your tastes! Pipe this on top instead of peanut butter if that sounds as weirdly gross to you as it did to me.

*This was ridiculous. Yup. Especially the coconut honey cream on top. Best idea I ever had. TRY IT!!!! Everything else I did just like the recipe. God. Damn. I would make this again in a heartbeat.

Lunch:

Kale, Shiitake Mushroom and Mozzarella Sandwich

A big bag of kale was on clearance at Kroger. YES! I adore kale. It’s been a while since I got a bag! I try not to buy anything thats not on sale anymore. Anyway, I sauteed a little chopped onion, in olive oil, wilted some kale, added the mushrooms, lemon juice, some cilantro, and some garlic salt and pepper. I put this on some Italian bread with cheese and grilled it to melt the mozzerella in a little butter. DAMN! I was really really impressed with how incredibly yummy this came out! I LOVE KALE!

Dinner:

Bratwurst with Apples & Onions

One of the most popular types of sausage in Germany is this delicately seasoned pork sausage. It’s perfect as an appetizer, ideal for breakfast or an entree at a casual weekend brunch.

Ingredients

6 Bratwurst, precooked (I used smoked turkey sausage)
1 Tbsp. butter
1 Tbsp. vegetable oil
1 onion, thinly sliced
1 apple, thinly sliced
2 Tbsp. flour
11/2 Cups chicken broth
1 Tbsp. vinegar (I used apple cider vinegar)
1 Tbsp. honey

Directions

To Cook: Place in a pan of water and bring to boil. Turn heat to low. Simmer for 10 minutes. Both precooked and fresh bratwurst may be heated in this manner. Grill or saute until lightly browned. In a frying pan heat butter and vegetable oil, add bratwurst and brown. Take out and set aside. Add onion and apple, saut6 until lightly browned; add flour. Combine well; add chicken broth, vinegar and honey; stir until it comes to a boil. Simmer five minutes. Return bratwurst to pan and continue simmering for five minutes.

*Uh…YUM! So simple, yet so very very delicious. Less is more! I added a little side of sauerkraut and I only used half an apple and half a turkey sausage because for some reason I wasn’t all that hungry and it was really late. Like, 10 at night. I would absolutely make this again though, especially since it was so quick and easy.

 

Remember, I also have a small bowl of ice cream like every night. And if I ever have a little extra snack or candy I do mention it, but I normally don’t snack throughout the day. It’s just not something I think about or do. I don’t know why.

I’ve got to be the only female on the planet freaking out slightly over LOSING inches.

Moving

I’m hoping to move into my brother’s within the next week.

The landlord of the apartment had no issues with my self-employment or lack of money at the moment. I explained the situation to him and he’s willing to work with me. I’m going to try and get him a deposit per my dad’s generosity and he’s said he will hold the place for a couple weeks until I’ve got the first month’s rent. All I’d need to do is move my bed, work table and fabric to my brother’s for a little while and work my ass off there until I’ve got the money. The landlord even said he’d prorate the rent for me since I’d only be there for like a week and a half in April. I’m going to do my best to not spend a lot. I will be cutting a lot of costs living over there and I think it will help me a lot.

And of course I need to sell my bike.

That would get rid of 2 of my credit card debts completely. Then I would only have 1.

I’m going to get my bike up on eBay Classifieds as well for a little more exposure. I have to do everything I can to sell this thing.

My husband was up all night with his best friend again last night. I was up from about 3 AM to 4:30AM tossing and turning while all I can hear are drumbeats of music and sporadic loud laughter and singing. I finally got tired of it and went downstairs to look for my earplugs. (My brother gave them to me a while back when I had to share a room with my mom at a hotel…he knows she snores loudly and thought they might be of use to me.) I did find them. Went to the bathroom to wash them off, making it fully clear that I was awake and not happy. Then went back upstairs and was soon dead to the world in a beautiful silence. I let shithead know I was pissed at him the next day and that he was not to speak to me. He says he’s sorry. He’s not sorry. He said he was sorry last time he did this. So if he really was sorry, he wouldn’t keep doing it. He doesn’t give a shit about me.

I’m just overly ready to move on with my life.

Breakfast:

Coconut Oatmeal with Yogurt and Mango

Made half a cup of oatmeal with half coconut milk and half water, plopped on a ton of greek yogurt and diced half a mango and threw it on top. Tossed a little unsweetened coconut on all of that. Perfect little morning pick-me-up that was quick and easy! This way I could get straight to work and not worry about the fact that there are 2 dipshits in the house that I’d rather avoid.

Lunch:

Quinoa and Tuna Salad

Quinoa with tuna, peas, corn, diced red pepper, tomatoes, celery and a little onion with apple cider vinegar, olive oil and splash of lemon juice. S&P to taste and a big dollop of cottage cheese on top. Brilliant! Light, fresh, GREAT for a pre-workout with tons of protein! I couldn’t have been happier!

Mango Chicken

I’ve made this before, though I liked the second version from the weed website more (without the weed), but it required yogurt and I am out now! So I used this one:

Ingredients:

  • (SERVES 4)
  • 2-3 chicken breasts, cut into 2 inch-long pieces (chicken thigh works too)
  • 1 red bell pepper, OR 1 sweet red pepper
  • 1/4 cup oil for pan-frying
  • 1 cup all-purpose flour (or rice flour) mixed with 1/2 tsp. salt
  • 1/4 to 1/2 cup fresh coriander
  • Optional: extra 1/2 to 1 mango, cut into chunks (to finish the dish)
  • Optional: 3-4 Tbsp. coconut milk OR water
  • MANGO SAUCE:
  • 2 fresh ripe mangos, fruit scooped out (or substitute 2 cups frozen or canned mango)
  • 1 red chili, de-seeded and diced, OR 1 tsp. chili sauce OR 1/2 tsp. dried crushed chili
  • 1 Tbsp. rice vinegar (OR white or apple cider)
  • 1+1/2 Tbsp. soy sauce
  • 2 Tbsp. fish sauce
  • juice of 1/2 lime
  • 1 Tbsp. brown sugar
  • 1 thumb-size piece galangal OR ginger, sliced
  • 3 cloves garlic
  • 1/4 tsp. turmeric
  • 2 kaffir lime leaves, snipped into slivers with scissors (discard stem & central vein), OR zest of 1 lime

Preparation:

  1. Place all ‘Mango Sauce’ ingredients in a food processor or blender. Process well, until more or less smooth.
  2. Taste-test the sauce. The goal is to reach a balance of sweet, sour, spicy, and salty. Add more sugar if you find the sauce too sour (this will depend on the sweetness of your mangoes). If not spicy enough, add more chili. If not salty/flavorful enough, add more fish sauce. If too salty or too sweet, add more lime juice. Set aside.
  3. Stir the flour and salt together and place in a mixing-type bowl. Add the chicken pieces and turn or gently stir them to coat.
  4. Heat a wok or frying pan over medium-high heat. Add the oil, then begin frying the chicken pieces. Fry 3-5 minutes per side, or until light golden brown and cooked through. Remove chicken from pan and set on paper towel, or a clean surface.
  5. Wash out the wok/frying pan, or use another (clean) one. Set over medium-high heat and add the mango sauce plus red pepper. Bring to a gentle boil, then reduce to a simmer (medium to low heat). If sauce becomes too thick, add 3-4 Tbsp. water or coconut milk. Simmer 3-4 minutes, or until pepper has softened slightly but still retains some crispness.
  6. Add the fried chicken pieces, gently stirring them in to cover with sauce. If desired, add chunks of mango (fruit of 1/2 to 1 ripe mango) too. Simmer briefly, just until everything is hot.
  7. Do a final taste-test for salt (tasting the sauce together with the chicken). Add a little more fish sauce or chili if desired.
  8. Transfer to a serving dish. Sprinkle with fresh coriander and serve with plenty of Thai jasmine-scented rice. Or, for an extra special treat, with my Easy Coconut Rice.

*I did not fry my chicken in flour. I sliced it up and seared it in oil for a few minutes. Removed it. Then stir fried some onions, red pepper and shiitake mushrooms. I blended all the sauce ingredients in a food processor and dumped them in after the onions were translucent. I cooked this down for a little while. Re-added the chicken and added extra mango cubes. I served this on a little sticky rice. One of my favorites! VERY yum!

 

One of my TV loves, Alton Brown, is on another diet. It’s INCREDIBLY fascinating for me to watch. He Twitters his weight every morning (kind of like I used to do on here) and what he’s eating and whatnot. He says he’s “disgusting” at 175 and wants to lose 10 lbs so he can fit into his tux more comfortably. It’s just absolutely fascinating for me to see someone I admire and look up to, a man nonetheless (proving this is not simply an “unrealistic female-standard” problem) whom I think is gorgeous and totally fuckable as-is, with the same damn body issues as I have. It actually makes me feel better about me, to know that we really are all in this together and that things are going to be fine if we can just gain a little self-confidence. I just have to look at ME the way I look at HIM and say “YES! I too am fuckable as-is!”
