Curiosity!

Incredibly proud of myself! It’s so much easier not to skip meals when I’m at home and HAVE to eat all these fresh fruits and veggies. I hate wasting food so damn much. Also, working makes me hungry.

I was VERY disappointed in myself though for waking up late…my brain didn’t get me up until 7:40!!! Why did it do that?? I went to bed…well…early enough…I mean I was talking with G until 1 AM, but really 5.5 hours of sleep should have been plenty! Sad.

I got my yoga in today. I can’t believe how friggin busy I’ve been lately and how often I’ve been skipping this. It always makes me feel so amazing. My back was just crying to be stretched out. I feel great!

Breakfast:

Strawberries, Peaches, White Nectarines, and Cherries with Greek Yogurt and Granola

GORGEOUS food!!! I’ve missed my beautiful food pictures dearly! So fresh and delicious!

Lunch:

Tomato Salad

2 small Tomatoes, cut into large chunks
1/4 cucumber, cut into large chunks
Fresh Corn, cut off of cob
1 large slice Vadalia Onion, chopped
1 small Carrot, sliced
Fresh chopped Basil
Red Wine and Pomegranate Vinegar
S&P

*With this a also had a small apple. I love my food!!! It’s so pretty!! I’ve missed this so much, it’s good to be back!

Dinner:

Apple Sausage Meatballs with Apple Raisin Wine sauce and Mashed Potatoes

Apple Sausage Balls

3/4 c. flour
1/2 t. baking powder
1/4 t. baking soda
1/4 t. salt
1 lb. bulk pork sausage (original or maple flavored)
2 c. shredded cheddar cheese
2 T. maple syrup
1 apple, peeled and diced
1/8 t. allspice

1. In a large bowl, stir together the flour, baking powder, baking soda and salt. Add the pork sausage, cheese, maple syrup, apple and allspice.
2. Using your hands, combine everything together until all of the ingredients are incorporated. Roll into evenly sized balls, about the size of a golf ball.
3. Place sausage balls on a baking sheet and bake at 375 degrees for 15-20 minutes, until fully cooked.

I made these exactly as instructed!

Sauce:

1/2 tsp. salt
1/2 tsp. ground sage (I used fresh)
1/2 tsp. ground black pepper
3 tart apples, sliced
1/2 c. packed brown sugar
2 tbsp. all-purpose flour
1 c. orange juice (I used red wine and apricot preserves for extra sweetness and flavour)
1 tbsp. vinegar
1/2 c. raisins

I sauteed the apples in olive oil for a little while until they started to brown. Then added all the other ingredients and let it reduce.

*I made mashed potatoes with a little cream cheese, milk and S&P. I’m out of butter, so none of that. Which is probably good as I consume far too much butter as it is. As usual, this dish was fantastic! I didn’t want pasta, so I thought the potato was a perfect substitute! Excellent!!! The sage in the apple gravy was the perfect touch!

 

Me being a MASSIVE nerd, I stayed up to watch the rover Curiosity land on Mars. You guys don’t even know. I was freaking out entirely. I wished I had someone to hug. I was so happy it landed safely and nearly cried when it sent the first pictures. I did fall asleep with the computer in my bed, but the second they started streaming the landing on the NASA website and people started talking, it woke me up and I was immediately pumped! I LOVE BEING A NERD!!!

Amazing!!! Fascinating! A rover as big as a car with LASERS is on Mars, people!!!

AND I have a date tomorrow at noon! Shit kids, this is the best night ever!

Breakfast:

Strawberry Cream Cheese Crepes

Crepes:

Ingredients

1/2 cup flour
1 egg
3/4 cup milk
1/8 teaspoon salt
1 tablespoon butter, melted

Directions

1. Mix everything in a large bowl.
2. Pour 1/4 cup of the mixture into a lightly buttered pan heated at medium.
3. Tilt the pan and turn so that the mixture evenly coats the entire bottom of the pan.
4. Cook the crepe until golden brown on the bottom, about 2 minutes.
5. Flip and cook the other side until golden brown.

Filling:

Ingredients:
1 (4 ounce) package cream cheese (softened)
1/4 cup icing sugar
1 tablespoon lemon juice
1 teaspoon lemon zest
1/2 teaspoon vanilla extract
1/2 cup heavy cream
1 batch crepes
4 tablespoons strawberry jam
2 cups strawberries (sliced)

Directions:
1. Mix the cream cheese, icing sugar, lemon juice, lemon zest and vanilla in a bowl.
2. Whip the heavy cream and fold it into the cream cheese mixture.
3. Spread 1 table spoon strawberry jam onto a crepe.
4. Add 1/4 cup of the cream cheese mixture and some strawberries in the crepe, roll and serve.

I was out of milk and had no cream so I used greek yogurt instead. GREAT substitute! These were probably the best crepes I’ve ever made (save for those insane mango ones I made once…but these are better for you.)

Lunch:

I had a PB&J sammich for lunch and an orange.

Dinner:

Sausage and Veggies on Rice

1/4 lb ground Sausage
1/3 c Peas
1 small ear of Corn, cut off cob
Some Onion, diced
1/2 cup Mushrooms, sliced
Shredded Cheddar
Oh crap what did I put in this? Uhhh…OH YEAH
1 T Hoisin sauce
1 T Honey Mustard
A big shake of Cajun Seasoning
S&P to taste

*Yeah I just sorta cooked all that together and put it on some white rice. Once again, very very good! I don’t know how it was, but it was! I mean really good! Go me!!! I also had ice cream for dessert.

I had to walk to work/the post office at some point today. I of course choose to do it during the  convenient time when G will be getting off of work in an hour. I get to work and go to request a day off (date of course), and then go visit him in his department. The crazy bastard hands me his keys so if I want I can wait in his car for him to get off work. I walk a package to the post office, come back to work, throw my bookbag into his car and lay on the pavement listening to music bouncing along to the beat. (It’s such a nice night, I am not waiting in a car…hehe). He calls me “fascinating” as he approaches. I don’t know how…I’m just listening to music outside on a beautiful night…it’s nothing any normal person wouldn’t do, right?

We decide to get coffee at a 24-hour joint.

Coffee turns into us splitting a burger and fries.

2nd dinner turns into us splitting a brownie sundae.

We eat like absolute crap when we’re around each other. And then don’t eat at all when we’re not. Perfect eating disordered couple…

We go back to my place and chat in the car for hours as usual. Eventually we are all over each other and things are fucking amazing.

Oh he leaves at like, 4:30 AM. Luckily he doesn’t work in the morning. I wouldn’t have visited if I knew he had to get up early though. I’m considerate like that.

Wish there were more hours in the day

Finished a project that I started last night, did yoga, went out to buy more supplies, started and finished another order, went to work out, and I came home with the intention of doing even MORE work, but was just so bushed. I’d never been so tired at 8:30PM before. I wish I were robotic. I wish I didn’t need sleep.

I would be incredibly sad to not need food though.

I love it even more now that it doesn’t control me.

Breakfast:

Creamy Pear Cardamom Oatmeal

I just made oatmeal with milk instead of water. Made sure to use enough milk that it was nice and creamy. Added lemon honey, cardamom and pear slices. Topped it with some sliced almonds. Really. Really tasty.

Lunch:

Smoked Sausage and Kale Soup

I’ve made this before. This time I made it with less oil (hehe), beef sausage instead of turkey and chicken stock instead of beef stock. Find the recipe here.

Dinner:

TODAY I got to have leftover lentils! YES! They totally saved some for me! Life is great! AND I didn’t even eat them all, there’s still another serving left!

 

Potential Future Husband #1 really wants to get back into shape. Which is totally awesome and adorable. He tells me every day how out of shape he is and how he’s going to fix it. He really really wants me to like him, I can tell. Lucky for him, I already do. No matter what weight he is. ~_^And I really mean that. It’s interesting to me how much I actually DO mean that.

But it totally can’t hurt.

Exercise: 1/2 hour of yoga, 1 hour at the gym

 

New shoes

I’m pretty sure I mentioned that I got new trainers the other day. $123.00 shoes for $30. CANNOT beat that. And while they are AWESOME shoes, they are also new. New shoes always come with a hidden price…breaking them in. It absolutely blows because I want nothing more than to walk everywhere and go work out and every time I do my 6 mile walk, I get blisters and tear up the back of my feet until they bleed. I threw out my old trainers like an idiot, not thinking that maybe I’d still need them until I could break these new shoes in. Great. So now I’m stuck dealing with really hurty feet for a while.

I just want things to not be so complicated, but that’s always far too much to ask. I understand this.

I also had problems purchasing the supplies I needed as one of the major components was “defective” and I have to wait another week for the store to get a new one in. Lovely. Luckily, my customers don’t need their items immediately. Otherwise I’d have to drive a half an hour to the next closest store.

I was able to purchase some of what I needed and get one order done. I started on a new one, not for anyone in particular, just some stock for my store. I was invited out by my brother. I had to turn it down to get work done. I was also invited out by 2 of my best friends (who happen to be a couple now, I am Miss Matchmaker as well!) but had to turn them down as well. I was stuck alone working all night.

Breakfast:

Parsnip Pancakes with Banana Brown Sugar syrup

Pancakes:

1/3 cup AP flour
1 T Sugar
1 Parsnip, grated
Nutmeg
1/4 cup Yogurt (I used Greek)
1/2 t Baking Soda
1 Egg

Mix dry ingredients plus parsnip. Mix wet ingredients in a separate bowl. Add wet to dry. Mix until just combined, lumps are not only okay, but encouraged. I think I dumped them out in 1/4 cups. It made 4.

Banana Brown Sugar syrup

Syrup:

  • 2 tablespoons butter
  • 1/2 teaspoon pumpkin pie spice
  • 2 tablespoons molasses
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 2 bananas, cut into 1/2-inch slices

For Syrup:

In a small saucepan, combine butter, pumpkin pie spice, molasses, brown sugar and 1/2 cup of water. Bring to a boil, add bananas then lower heat and let simmer for 3 minutes. Remove syrup from heat, cover and keep warm. Serve over French toast.

*I’ve learned something about syrup. I allowed this to simmer for the time allotted instead of freaking out thinking it’s not thick enough and letting it cook too long. I turned it off and let it sit and it thickened up beautifully on its own. No extra help from me! I burned the pancakes a bit because I was using a new griddle I’d never used before and didn’t know how hot to make it. BUT luckily all the other flavours are so intense, I didn’t even notice! It was wonderful! Like carrot cake pancakes, but with the nuttiness of parsnip instead, which went BEAUTIFULLY with the bananas!

Lunch:

I have no idea what happened, I totally took a picture of my lunch and can’t seem to locate it. Bpttttth. I had a big bowl of cottage cheese and an English muffin again with jelly. I was busy busy busy today. Per usual lately eh?

Dinner:

Cilantro Mustard Sausage over Sauerkraut

I sauteed some onions and green peppers in oil and a little butter. I added the sausage and let it cook for a couple minutes. Added a big splash of red wine vinegar, some fresh chopped cilantro and this awesome jalapeno cilantro  mustard that my sister in law bought for me on clearance. I pushed all that off to the side of the pan and added the sauerkraut on the other, also splashed with a little red wine vinegar, and topped it all with some S&P. Let the sauerkraut cook until it started to brown just a little. Then served it up! YUM! I wanted an excuse to use that mustard, so this was perfect! I wanted to keep dinner flour and pasta-free since I had some for breakfast, so the sauerkraut was perfect!

 

I spent the day once again working my ass off because I want to go to a party tomorrow night. I got one project completely done and another half done. If I can finish the other half in the morning I get to party. It would make me so very happy. I never get to party. I might even get to have a couple drinks! *WHAAA?* That’s right! I won’t have to drive (we live a block away from this guy’s place) and don’t have to feel bad about myself anymore for drinking the “empty calories” for one freakin night. We shall see!

Being girly is fun!

I never pamper myself. Sometimes I come home from the gym and don’t even take a shower because I’m so rushed. I haven’t re-dyed my hair since Valentine’s Day. I never do my nails. I hardly get to dress up nice, half the time when I leave the house I’m walking somewhere so I just wear a tshirt and jeans. You don’t even want to think about how long I’ve gone without shaving my legs.

Tonight I got to be girly with my sister in law. She’s big into nail polish, so I got to paint my nails with her! They are bright sunshine yellow and they make me incredibly happy to look at! I’m hoping I will take the time more often to just give myself a little “me” pampering time. Though I definitely considering cooking pampering my body as well, from the inside out, it would be nice to take a little extra effort on JUST the outside.

I told Future Husband #1 that I was making myself pretty by painting my nails. He of course tells me that I am already pretty, but he is glad that it is making me happy.

I also got called into my retail job today! WHAT? That’s right, for the first time in 3 and a half weeks I got to go to work. I enjoy it there, the customer always respond really well to me. I think it’s the hair. So I was excited to go in! It was a good day.

Breakfast:

Cinnamon, Raisin, Cranberry and Walnut Quinoa

1/3 cup uncooked Quinoa
2/3 cup Water
2/3 cup Milk
1 T Lemon Honey (or any honey)
Raisins
Dried Cranberries
Walnuts
Yogurt

Cook the quinoa in water as directed (covered for about 10 minutes). Uncover and add 1/3 cup milk. Simmer until all the liquid is absorbed. Repeat with the second 1/3 cup of milk and toss in the honey, raisins and cranberries (however many you’d like). Let that absorb. Take off the heat and add walnuts. Serve with a big dollop of yogurt on top. Freaking delicious!

Lunch:

I went into work today, so I had a turkey wrap sandwich and a banana for lunch!

Dinner:

Whole Wheat Penne with Mushroom Sausage sauce

I didn’t measure anything. I sauteed some onion and crushed garlic in butter and oil. Added some diced green and yellow pepper and about half a small diced tomato. Then the sausage and finally the mushrooms. I pushed all that to one side of the pan, and on the other melted a chunk of cream cheese. Then added about 1/3 cup of milk and 1/8 cup of chicken stock. Melted about 1/8 cup of grated Romano in that, then mixed the whole pan together. I added some basil and a little cinnamon.  I allowed that to cook down and thicken up for a minute or 2. Then served it on top of some whole wheat penne. Fanfuckingtastic yo. My brother and sister in law went out for dinner since I was gone late, so I was perfectly happy to make myself something quick and easy and awesome. ^_^

The landlord DID finally get back to me letting me know that he was just busy and that he was sorry and when is a good time to call? So I let him know she was working Thursday evening. I’m really really hoping he doesn’t forget. I really can’t stand this whole not knowing whats going on BS. I just want to be completely sure I don’t have to live here at my brothers any longer than I absolutely have to.

Superfast update

No time for blogging, must work…work all the time. Rest is for the weak and mortal.

The “exclusive rights” flirting in between has been incredibly pleasant though. I am now going to be making a pair of yoga pants that I am to eventually be oogled in, of course whilst doing my yoga.

Breakfast:

Smoked Sausage Omelette with sauteed Mushrooms and Onions and Sharp Cheddar

That was it! I think I also used a little garlic powder and S&P of course, but otherwise these were very simply seasoned. I chopped a little green onion on top. I always cook my fillings separately from the actual omelette and fold them in afterwards. I do usually melt the cheese onto the omelette while its still cooking in the pan. Incredible!

Lunch:



Green, Green Pea Soup with Ginger and Cilantro

Ingredients

2 tablespoons butter
1 smallish yellow onion, chopped
1 teaspoon each finely chopped ginger and garlic
kosher salt
3 large sprigs cilantro (plus more for garnish)
1 fist-sized potato, peeled and diced (I did not use potato)
1 quart chicken broth
1 16-ounce bag of frozen petite peas
1 cup coconut milk, shaken (plus more for drizzling)

Directions

Heat the butter in a soup pot over medium-low heat and sauté the onion, ginger, and garlic until the onion is just getting translucent, around 3 minutes. Add the cilantro, potato, and broth, bring to a boil over high heat, then reduce the heat and simmer, uncovered, until the potato is tender, around 20 minutes.
Add the peas and cook for another 6 or 7 minutes, until the peas are bright green and tender, then stir in the coconut milk (save a few whole peas for garnish, if you like).
Puree the soup with a stick blender or in batches, very carefully, in a blender (for a silky-smooth texture, you can pass it through a food mill). Taste the soup for salt and serve, garnished with the reserved peas, a few cilantro leaves and a drizzle of coconut milk.

*Even though I cut the potato, this was still VERY delicious. You will be tempted to add lemon juice. Don’t do it. I wanted to and was really glad that I did not. It lets the cilantro shine as the “citrus”-y ingredient. I can see how the potato would make it a little “creamier”, but I didn’t mind that it was a thinner soup. I always make everything creamy, I didn’t have to this time.

Dinner:

AGAIN forgot to take a picture. AGAIN! This is terrible and unacceptable. I am very sorry. I will do everything I can to remember tomorrow night! We had grilled brats with sauerkraut and grilled butternut squash with a little butter and brown sugar. Mmmmmm! SUPER yummy! Pretty too, of course no picture…I suck.

 

I finished off my Candy Corn and Cadbury Eggs. So now the only thing I have left is about 3/4 of a bag of Starburst Jelly Beans. After I am done with it I am done with candy for a while.

OH OH this is really cute! Last night “Future Husband #1” was telling me about how he wants to get back into working out and get healthy and all that. We had quite a lengthy conversation about it.  It’s so cute because I know he’s doing it to try and win me over, be more attractive to me, etc…since of course being fit and healthy are very important to me.

And it will work.

FISH!!! (WARNING: Gutting pictures included!)

I do apologize ahead of time as I realize a lot of people who follow me on here are vegetarian or vegan due to moral reasons and will not want to see fish-gutting pictures. So here is a fair warning that they are included in this post as I am proud of my weird accomplishment.

I totally never get to eat fish. Shitbag bought a fishing license the other day and brought me one because he knew I really really wanted to learn to gut and clean my own fish. I don’t know why. It’s just all part of the cooking experience for me I guess. And I love camping, so it would be an awesome life-skill to have. ALSO if he goes fishing, I can pay him a couple bucks for a couple fish and it would save me a TON of money knowing how to prepare it myself. AND I’LL GET TO EAT FISH ON A REGULAR BASIS!!!

At least shithead likes me sometimes.

Breakfast:

Scrambled Eggs with Kale

Ok this turned out WAY better than I thought it would. I sauteed the kale with a little onion and diced tomato in olive oil until it was wilted. I scrambled the eggs separately, 2 of them, with a little milk, garam masala and a pinch of cardamom. S&P to taste of course. And then mixed them together and threw some dried cranberries on top. Um yeah what the hell was it about this? It was REALLY really good!!! Less is more!

Lunch:

Kale and Smoked Turkey Sausage Soup

This was so good I’d BETTER remember what I put in it.

1.5 cups Beef Stock
About 1/2 cup Water
Probably a bit too much Olive Oil (I’ll explain that)
Small pat of Butter (maybe 1 t)
1 medium Carrot, cubed
1/2 Turkey Sausage link (you know, a bratwurst-sized link)
Big handful of Kale
A little diced Onion
1 t Garlic Powder
1.5 T Lime Juice
1 Bay Leaf
S&P (not too much salt though, there’s plenty already in there)

I started to pour the olive oil in and the top pourer thing fell off. So I accidentally poured a TON of oil into the pan…I tried to take as much as I could back out, but the bottom was pretty coated. I added a little butter anyway…Mmmmm…hehe…and sauteed the onions, carrot and sausage in it for a little while. I added the stock, water, lime juice, bay leaf and seasonings along with the kale. I covered it and let it cook for about 10-15 minutes…whenever the kale is wilted and carrots are cooked. Take out the bay leaf and serve!

Dinner:

FISH TIME with Mz. P!!!!

I then splashed on some olive oil, lemon juice, salt, lemon pepper and dill, wrapped it in foil and cooked it over a campfire my shithead husband had started in the backyard. It was……FANTASTIC! Fan fucking tastic. I’ve never had fish this fresh before in my life. Oh. My. God. You haven’t lived until you’ve eaten fish this fresh.

I also had about a cup of mixed corn and peas as a side dish. With a little salt and margarine.

 

I hope you at least sort of enjoyed my adventures in fishy-gutting land! I was really super proud of me. I know a lot of you won’t be…don’t be mad! He went to a good home in my tummy! I didn’t waste him at all! I just really like learning really weird little skills…it will benefit my diet in the end as I will be able to incorporate more fish in it! YAY!!!

Getting thinner?

Whoops.

Somehow I’m losing inches.

Not weight…I actually, last I checked, still weigh the same. About 143 lbs. Granted, I only check once a month now to keep myself sane. But I could tell when I put my hands on my hips that I felt smaller. So I measured myself today. My waist is back down to 26.5 inches.

What the hell?

I’m guessing it’s my working out that’s doing it. I know I’m gaining muscle as I definitely look leaner. But I’m worried about looking too thin. It’s not my intention to do so. I’m also assuming though that if I look leaner and muscular, I won’t look too thin?

I’m a bit confused. My cousin that keeps me accountable says I’m ok. I eat well and am conscious enough about keeping healthy that I’m clearly taking care of myself. So I shouldn’t worry. What do all of you think? You see what I eat and how much I work out every day. Which really, I go to the gym LESS now than I did in the winter since I do more walking, only about 2-3 days a week, and walk the rest of the time. So what do you think? Since I still weigh the same am I doing ok?

Breakfast:

Mango Breakfast Pizza

  • 2 cups spelt flour (I used half whole wheat, half AP)
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup organic butter
  • 2 tbs brown sugar
  • 2 tbs white sugar
  • 1/2 cup soy milk (I used 2% milk)
  • 1/4 cup jam (I used strawberry jam)
  • 1/4 cup cream cheese
  • 1 mango, thinly sliced
  • 1/4 cup sweetened shredded coconut
  • As much peanut butter as it takes to float your boat (I made a coconut cream syrup topping)

Preheat oven to 400. Oil a full-size spring form pan (9in I believe). Mix together the (1st three) dry ingredients in a large bowl with the sugars. Pour in milk and softened butter. Mix together to form a dough. I used my hands, it was fun. Use your hands again and press dough evenly into the bottom of the spring form. Mix together jam and cream cheese and spread over crust, I reserved some because I wanted an exposed crust. Arrange your mango sliced over top and sprinkle with coconut.  Throw that baby in the oven for about 25 minutes.  When she’s done and cool, drizzle peanut butter across the top (or pipe with a piping bag if you suffer from some sort of neuroses like I do).

Coconut Cream Syrup topping:

Coconut Milk
About 1 T Cream Cheese
2 T Honey
A little water to thin it out

Melt the cream cheese in a saucepan. Add the rest of the ingredients and simmer until thickened. Add a little more of whatever you’d like to make it to your tastes! Pipe this on top instead of peanut butter if that sounds as weirdly gross to you as it did to me.

*This was ridiculous. Yup. Especially the coconut honey cream on top. Best idea I ever had. TRY IT!!!! Everything else I did just like the recipe. God. Damn. I would make this again in a heartbeat.

Lunch:

Kale, Shiitake Mushroom and Mozzarella Sandwich

A big bag of kale was on clearance at Kroger. YES! I adore kale. It’s been a while since I got a bag! I try not to buy anything thats not on sale anymore. Anyway, I sauteed a little chopped onion, in olive oil, wilted some kale, added the mushrooms, lemon juice, some cilantro, and some garlic salt and pepper. I put this on some Italian bread with cheese and grilled it to melt the mozzerella in a little butter. DAMN! I was really really impressed with how incredibly yummy this came out! I LOVE KALE!

Dinner:

Bratwurst with Apples & Onions

One of the most popular types of sausage in Germany is this delicately seasoned pork sausage. It’s perfect as an appetizer, ideal for breakfast or an entree at a casual weekend brunch.

Ingredients

6 Bratwurst, precooked (I used smoked turkey sausage)
1 Tbsp. butter
1 Tbsp. vegetable oil
1 onion, thinly sliced
1 apple, thinly sliced
2 Tbsp. flour
11/2 Cups chicken broth
1 Tbsp. vinegar (I used apple cider vinegar)
1 Tbsp. honey

Directions

To Cook: Place in a pan of water and bring to boil. Turn heat to low. Simmer for 10 minutes. Both precooked and fresh bratwurst may be heated in this manner. Grill or saute until lightly browned. In a frying pan heat butter and vegetable oil, add bratwurst and brown. Take out and set aside. Add onion and apple, saut6 until lightly browned; add flour. Combine well; add chicken broth, vinegar and honey; stir until it comes to a boil. Simmer five minutes. Return bratwurst to pan and continue simmering for five minutes.

*Uh…YUM! So simple, yet so very very delicious. Less is more! I added a little side of sauerkraut and I only used half an apple and half a turkey sausage because for some reason I wasn’t all that hungry and it was really late. Like, 10 at night. I would absolutely make this again though, especially since it was so quick and easy.

 

Remember, I also have a small bowl of ice cream like every night. And if I ever have a little extra snack or candy I do mention it, but I normally don’t snack throughout the day. It’s just not something I think about or do. I don’t know why.

Made an apartment appointment!

I’m going to see a place on Tuesday that is in the perfect area for the perfect price. It’s not big, it’s not terribly classy, but I will make it so! I’ll New York that shit like nobody’s business!! You’d think when you walked in that I lived in a $5,000 flat in Manhattan! Pictures will be taken. Make it work kids, make it work!

I need to get my bike sold though really badly for me to be able to afford this. My uncle cannot afford it, so I’m putting it up on Craigslist. I’ve got all my pictures adjusted and looking pretty. It’s definitely prime riding season right now so anyone who doesn’t have a bike who wants one is going to be getting the itch! I should know, I got it at one point too.

My brother and sister-in-law have invited me to go see The Hunger Games with them today! I just finished reading the book not long ago, so it’s very sweet that they waited until I was finished to go see it. My sister-in-law says its no fun going to see a movie where you’re the only one in the group who’s read the book, hehe. So she was happy to wait.

Breakfast:

Yep. Just some plain Cheerios. I dunno, I think my stomach has finally had enough junk for a couple of days *whew!*. So this was all I was in the mood for. And because of the movie (which is at 3:30 and I’m walking to my brothers and want to be there by 3:00 so I need to leave by 2:00 to be certain) I needed to start my day early. Which means no cooking. :<

Lunch:

Ok ok so I didn’t really have lunch. I worked right up till 1:30 when I had to shower, print postage for some items, get myself organized and get the hell out. The movie itself was 2.5 hours long, which I totally didn’t care because it was outstanding. VERY true to the book (not that that’s something I really care about…I’m not one of those annoying nerds who flips out when they change something) and very emotional. I also adore Woody Harrelson and didn’t even realize he was in this! So that was a massive added bonus for me. The movie ended at about 6. I was home by around I dunno, 6:20. I had an orange. There, that was my lunch. By that time it was sort of dinnertimeish and didn’t need a whole huge lunch. I worked up until husband asked me if I wanted to go grocery shopping (just for ourselves) at around 8. Then when we got back I made this:

Dinner:

Tomato Sauce with Turkey Sausage, Zucchini and Peppers on Vegetable Fettuccine

I made a sauce with canned tomatoes, 1 diced fresh tomato, about 1 heaping T of tomato paste (I like my tomato sauces really tomato-y), 2 T grated Romano, about a T of margerine (I used some to cook the veggies and meat and added a little more to the sauce later), a splash of red wine vinegar, a splash of lemon juice, a generous amount of dried basil, oregano and parsley, grated in a bunch of garlic (1 large clove), crushed red pepper and finally (my secret ingredient of the evening) a pinch of cinnamon and sugar. And of course S&P to taste. I sauteed some diced onions, diced yellow and green pepper and sliced zucchini and turkey sausage in the pan with some olive oil and margarine for about 8 minutes. Then added all the sauce ingredients and allowed it to thicken and cook down probably a good 20 minutes. I served it all on top of some “Garden Delight” Fettuccine and sprinkled some grated mozzarella on top of all of it. It was seriously FANTASTIC, I don’t know how I got the idea to add the cinnamon at the last minute but it went SO beautifully with the sausage. Definitely do this!

 

I am sorry my recipes have been somewhat sporadic lately. Some I can remember ingredients, others I can’t…my format has been funky. My life has been sort of funky as of late, so it’s the best I can do while keeping up with this. I promise it will get better when I am moved out and get everything in some form of order. Through all of this I’m trying to remember to take care of myself and put my body’s needs first. If my body doesn’t work, then I can’t function properly.

I may have sold my Harley!!!

My cousin, who is one of the most amazing, strongest kids I know, has been trying to help me out for the past week without my knowledge. She’s found 2 people who are interesting in purchasing my motorcycle…including her father!! That’s right, my uncle wants to buy it! I mean, how cool is that?? I could keep it in my family! And he has NO idea how much it would help me…or maybe he does. ~_^ Which is why he wants to buy it. I adore my family!!! Also, in case he can’t afford it or whatnot, she has another friend lined up who is also very interested! My cousin, her and I are gonna be besties, I can tell.

Breakfast:

Turkey Sausage, Yellow Pepper and Mushroom Omelet with Pepperjack Cheese

This thing was MASSIVE. I did eat it all, just because I couldn’t stand the thought of wasting anything. I figured if I was really full, I could always just have a light lunch later. And that’s exactly what I did.

I spent the next few hours tearing my hair out over a project that I couldn’t get to do what I wanted. This thing was a structural nightmare. I spent 3 extra hours I would not have had to spend otherwise had everything worked out on the first try. Alas, I’m hardly ever that lucky. I feel like I wasted a LOT of time today. *sigh* It’s no wonder I’ve been freaking out over lack of time.

Lunch:

Fruit Bowl

This was just an orange, half of a huge pear and half of an equally huge apple cubed up and thrown in a bowl with a dollop of yogurt (left over from last night’s dinner) and a few dried cranberries. It’s been a LONG time since I’ve had just a fruit bowl for lunch, I’d forgotten how yummy and filling they are! It was nice and light after that HUGE breakfast, so I was quite happy!

Dinner:

Beef, Yam, Peas and Avocado on Whole Wheat Penne with Yam Sauce

Just trying to keep things simple as I’ve had a considerable lack of time today. I made a sauce out of pureed yam, milk, brown sugar, sherry, sage and nutmeg.  I sauteed beef, onion, garlic, peas, cinnamon and a little cumin, then added the sauce along with a couple extra chunks of cooked yam and avocado and let that heat through. I mixed it all together and served it with a few more cubes of avocado on top. SCORE! This was delicious! I knew I’d love it and it was nice and easy!

 

Once again I do apologize for the recent lack of real recipes to type out for you. A lot of this has really been worth sharing too, absolutely delicious, so I feel kinda bad. But really a lot of it just has to do with throwing in what YOU love together and making something amazing out of it!

I’m feeling really great about today! I’m freaking out slightly less about money due to the possibility of selling my bike. I talked to my brother best friend about me taking over his lease and having him move in here as my husband has told me that he was interested in doing this and wanted to move. I should have known better. That it was another fabrication. He has no interest in moving out at all. Of course not. So now I have to look closer at all my other options. But if I sell my bike, I’m going to be ok because I can show I have money in the bank. YES!
